This is a super simple recipe that goes well with Mexican food or pretty much any grilled meat. Light and tasty, this is especially great in the summer. Add beautiful tomatoes to the dish, when they are in season for extra tastiness
- 1 can black beans, rinsed and drained
- 2 cups frozen corn kernals, thawed
- 2 limes
- 1 cup chopped cilantro (about ½ of a large bunch)
- Assemble salad: Mix 1 can drained black beans, corn, 1-1/2 limes, corn, and ¾ c cilantro. Add ½ tsp salt. Taste. Add more salt, gradually, as needed.
