Cilantro-Lime Rice

  • 1 TBSP olive oil
  • 1 small onion, diced
  • 2 cups white rice (I recommend Basmati)
  • 3 cups boiling water
  • ¼ cup chopped cilantro leaves with tender stems (about ½ of a big bunch)
  • Juice of 2 limes
  1. Sauté onions, in olive oil, in a large saucepan (that has a tight fitting lid) on Med/Low until onions soften, about 5 minutes. Stir in rice, coating it in olive oil. Mix in 1 tsp salt. Cook 1-2 minutes, until the rice is fragrant (but not burned!).
  2. Add boiling water and gently stir, so that all rice is submerged in the water. Bring to a boil. (You might have to raise the heat to Med or Med/Hi).
  3. Once the water begins to boil, reduce the heat to the lowest possible setting your stove can go to, with it still being on. Cover tightly with aluminum foil (so that steam doesn't escape) and place the tight-fitting lid on the pot, over the aluminum foil. Cook for 15 minutes. (DON'T PEAK!)
  4. Remove from heat and let sit for 5 minutes, covered. (Again, DON'T PEAK!) Remove aluminum foil and lid. Fluff rice with a fork.
  5. Squeeze in the juice of 2 limes. Gently stir in cilantro. Enjoy!
