It is amazing that you can get something so tasty with so little effort. The magic to this side dish is that the oven does all of the work to give these a caramelized, sweet goodness. To literally make this no work, buy sliced peppers and onions from the produce section or salad bar at your market or grocery store. Serve this alone as a side dish, mixed in with just about any healthy grain (rice, quinoa, faro, etc.), over pasta, on a sandwich, or mixed into any salad. So versatile and so delicious!
Buy onions and peppers pre-sliced from your marketplace for a no-work side dish.
Make sure you spread out your veggies so they can get nice and roasty!
- 3 large sweet peppers (yellow, orange, or red), sliced
- 2 small or 1 large onion, sliced
- 2 TBSP olive oil
- 2 tsp balsamic vinegar
- Preheat oven to 425.
- On an aluminum foil-lined cookie sheet, rub olive oil, balsamic vinegar, and a generous pinch of salt (about ½ tsp) all over the peppers and onions. Spread onions and peppers out onto a single layer. Place in oven for 25-35 minutes, until veggies and beginning to caramelize and turn brown on the ends.
